Shiraz

Shiraz being so prolific is a difficult cultivar to manage as it easily grows too dense and is detrimental to grape fertility and wine quality. We hardly fertilize it at all with any pre harvest nitrogen to try to control growth.

The long stemmed rankling bunches are easy to harvest, very rewarding to our workers who usually have a "field day". All harvesting is done by hand and all leaves are removed so as to limit astringency in our wines.

I believe healthy grapes need simple vinification to make drinkable but complex wines ! Our grapes tend to ripen at higher sugars, which invariably lead to fuller wines and a sweetish pallet while having low residual sugars.
