Chenin Blanc
We aimed to make a traditional chenin blanc, as we get it out of the ground. The grapes were handpicked early in the morning, in small containers, to minimize berry damage. Here after the grapes were chilled and whole bunch pressed, not crushed. We also aimed to make this a low sulphur wine.
